carrot salad

i made this carrot salad for a potluck the other night and it was so good.  a new favorite.  based on a  moosewood recipe with a few additions.

my recipe:

3 cups peeled & grated carrots (i used my juli peeler)

2 celery stalks chopped

some finely sliced red cabbage

a handful of dried cranberries


3 tablespoons olive oil

glug of red wine vinegar

1 garlic clove pressed

2 teaspoons minced fresh cilantro

1 tablespoon minced fresh parsley

1/2 teaspoon salt

2 tablespoons fresh lemon juice

pinch of cayenne

whisk dressing ingredients together and pour over carrots and things.  stir.  yum.
